  • ¾ cup (175ml) unsweetened applesauce
  • 1¼ teaspoon baking soda
  • ¼ cup (55 grams) butter, softened
  • ¾ cup (175ml) olive or canola oil
  • 1 cup (200 grams) coconut / unrefined / white sugar
  • 8 ounces (225 grams) cream cheese, softened
  • 1 large egg
  • 3 large eggs, lightly beaten
  • 3½ cups (8.2dl) peeled and finely chopped Gala* apples (3 large apples)
  • ½ teaspoon ground allspice
  • 2½ teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ cup (160 grams) honey
  • 1 tablespoon molasses
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1½ teaspoons vanilla extract
  • 3 cups (400 grams) whole wheat flour


  1. Preheat your oven to 350°F / 175°C
  2. Spray a 12 bundt pan very thoroughly with cooking spray.For the filling, combine the cream cheese, butter, and sugar in a medium bowl
  3. Beat with an electric mixer until well combined and then add the egg, flour and vanilla
  4. Beat just until combined.For the cake, mix together the dry ingredients in a large bowl
  5. In a medium bowl, mix together the wet ingredients
  6. Add the wet mix to the dry and stir, just until combined
  7. Fold in the apples.Pour about ½ of the batter into the greased pan and then top with the cream cheese filling, keeping a one inch border around the pan's edge
  8. Pour the rest of the batter over the filling.Bake for 50 minutes, or until a toothpick inserted in the center of the cake comes out clean
  9. It might be a little sticky and that's okay because it'll continue to cook even after it's out of the oven
  10. Let the cake cool in the pan for 15 minutes and then turn out onto a wire rack to let cool completely
  11. It needs to be completely cool if you decide to ice it!
