Ingredients

  • 1 tsp baking powder
  • 2 bananas - ripe
  • 1 c blueberries
  • 1 Tbs canola oil (for cooking)
  • 2 tsp cinnamon
  • 2 egg whites
  • ¼ c milk - fat free
  • 2 Tbs flax seed meal
  • ½ tsp ground cloves
  • 1 tsp nutmeg
  • 2 c oats
  • 4 scoops protein powder (such as BioChem vanilla)
  • ½ tsp salt
  • 2 tsp vanilla
  • 2 Tbs wheat germ

Instructions

  1. In a medium bowl, use a fork to mash bananas with vanilla, egg whites and milk.Stir in oats, protein powder, baking powder, flax, wheat germ, salt, cinnamon, nutmeg and ground cloves.Pre-heat a skillet over medium heat and coat with oil.Pour batter ¼ c at a time to form pancakes.Sprinkle pancakes with blueberries before flipping
  2. The cakes are ready to turn when bubbles form.Once flipped, cook for an additional 2 minutes on the 2nd side or until browned.
