Ingredients

  • 1 pepper chopped (we use this if in season or skip if not)
  • 1 14 oz can of diced or whole tomatoes
  • 2 lbs chicken breasts, boneless
  • cumin, chili powder and oregano to taste
  • ¾ cup Old El Pasa Enchilada sauce
  • 2 tbsp Extra Virgin Olive Oil (Marty is allergic to coconut. If you follow the Paleo diet & are not, use coconut oil)
  • 1 tbsp minced garlic
  • 1 onion, chopped finely

Instructions

  1. Put the chicken in the crockpot.Add everything else.Cook on low for 8-10 hours or on high for 6-18.Add salt and pepper and your favorite toppings.
