  • ¼ cup finely chopped bell pepper
  • 4 slices of ciabatta or other homemade bread
  • 4 slices Vermont extra sharp cheddar
  • green onion or chives to taste
  • 1 tbsp fresh lemon juice
  • 2 tbsp mayonnaise (homemade is best)
  • salt and pepper
  • 1 can of Wild Planet Albacore Tuna, drained


  1. Mix the Wild Planet Albacore Tuna, bell pepper, green onion or chives, mayonnaise, lemon juice and salt and pepper in a bowl.Toast BOTH sides of the ciabatta or homemade bread under the broiler.Remove from oven.Top the bread with several scoops of the tuna mixture and enough cheese to cover the tuna.Return under the broiler and heat until the cheese is melted and the tuna mixture is bubbly.
