Ingredients

  • Handful arugula
  • 1 Tablespoon butter
  • 1 cup leftover diced ham
  • 8 eggs
  • 1 leek, white and pale green parts only, chopped and well rinsed
  • ½ cup Parmesan cheese

Instructions

  1. Preheat the oven to 425 degrees.Melt the butter over medium heat in an 8 inch cast iron skillet or other oven proof skillet
  2. Add the leek, and ham and saute for 1-2 minutes
  3. Add the eggs, stirring gently to combine
  4. Sprinkle cheese on top
  5. Allow the mixture to cook for about 1 minute.Place the skillet in the oven and bake for 10-12 minutes or until puffed and set
  6. If desired you can turn the broiler on for an extra minute or two to brown the top.To serve, sprinkle with arugula and a dollop of sour cream (optional).
