Ingredients

  • ½ cup chopped raw almonds
  • ½ cup applesauce
  • ½ cup cooked quinoa
  • 1 cup dried cranberries
  • ½ teaspoon ground cinnamon
  • 2 tablespoons maple syrup
  • ½ cup Quinoa Flakes(or oatmeal)
  • 5 unsalted organic brown rice cakes
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 300 degrees
  2. Line a rimmed baking sheet with parchment paper.Crumble rice cakes into a bowl
  3. Add quinoa flakes, cooked quinoa and raw almonds
  4. In a small saucepan heat maple syrup, apple sauce, cinnamon and vanilla over low heat
  5. Stir into quinoa and rice cake mixture.Spread in a single layer on prepared baking sheet
  6. Cook for 10 minutes
  7. Stir and cook 10 to 15 minutes more
  8. Break into clusters and mix in dried fruit.
