Ingredients

  • ¼ cup almond milk (or milk)
  • ¼ cup applesauce
  • 1 teaspoon baking soda
  • 2 1/3 cups ripe bananas (about 4 large)
  • 1 cup chocolate chips
  • ¼ cup coconut oil, melted (or canola oil)
  • 1/2 cup coconut palm sugar (or sugar)
  • 1 cup cooked quinoa
  • 2 large eggs OR flax eggs (instructions below)
  • 1 ½ cups gluten free flour blend OR all purpose flour
  • 1 teaspoon ground cinnamon
  • ½ cup quinoa flour
  • ¼ teaspoon sea salt
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350 degrees
  2. Line a 13 x 9 inch pan with parchment paper so that the parchment paper slightly overlaps the edges
  3. If using flax eggs combine 2 tablespoons of ground flax seeds with 6 tablespoons of warm water
  4. Stir well and set aside.In a large bowl combine bananas, palm sugar, apple sauce, coconut oil, milk, eggs and vanilla
  5. Whisk until well combined
  6. Add baking soda, cinnamon, sea salt, and flour
  7. Stir until blended
  8. Add quinoa and ½ cup chocolate chips and mix until combined.Transfer mixture to prepared pan and sprinkle with chocolate chips
  9. Bake for 30 to 35 minutes, or until a toothpick comes out clean
  10. Let cool completely in pan and remove from pan by lifting the parchment paper
  11. Cut into 48 squares.
