Ingredients

  • 15 oz can cannellini beans - drained and rinsed
  • 12 oz chicken breasts
  • 15 oz can fire roasted tomatoes - diced
  • 3 cloves garlic - grated
  • 1 Tbs dried Italian seasoning
  • 1 tsp kosher salt
  • ½ tsp pepper
  • 1 red pepper - diced
  • 15 oz can tomato sauce - unsalted
  • 1 zucchini - diced

Instructions

  1. Place chicken breasts in the bottom of your slow cooker and season with garlic, Italian seasoning, salt and pepper.Add diced peppers, zucchini, beans, fire roasted tomatoes and tomato sauce.Stir well and heat on Low for 6 hours or High for 3 hours.Towards the end of cooking time, use two forks to shred chicken and stir well.Serve over brown rice, whole wheat pasta or Bulgar wheat as pictured above.
