  • 2 tablespoons brown sugar
  • 2 teaspoons fresh ginger root
  • ¼ teaspoon dried or fresh parsley for garnish
  • 1 clove garlic (diced)
  • 1 grapefruit
  • ½ teaspoon ground pepper
  • 2 tablespoons onion (chopped)
  • ¾ teaspoon red pepper flakes
  • 2 salmon fillets (6 ounce size)
  • 2 tablespoons soy sauce
  • ¼ cup water


  1. Preheat oven to 350 degrees F
  2. In a bowl, combine the soy sauce, water and brown sugar
  3. Peel and dice the ginger root
  4. Chop the onions and dice the garlic
  5. Add the ginger root, onions and garlic to the soy sauce mixture.Add the red pepper flakes, and ground pepper to the soy sauce mixture
  6. Squeeze the juice from the grapefruit into the soy sauce mixture and stir all ingredients together to make the marinade
  7. Lay a large piece of foil on a cookie sheet or pizza pan.Lay the pieces of salmon on the foil
  8. Pour the marinade over the salmon making sure that it stays on the foil
  9. Pull all of the sides of the foil up together to make a "tent" and roll the top edges tightly together to seal the tent.Bake salmon in preheated oven for about 10 minutes
  10. Salt to taste and serve over rice
  11. Garnish with dried or fresh parsley.
