  • 1 Can Artichokes in brine (not marinated) drained
  • Basil
  • 1 14oz can Diced Tomatoes with Garlic and Onion
  • 1 tsp minced garlic
  • Oregano
  • 2-4 Boneless Skinless Chicken Breasts (Depending on size)


  1. Place chicken breasts in crockpot and top with tomatoes, drained artichokes, roasted red peppers, basil,oregano, and garlic.Cook on High for 4 hours or low for 7-8 hours.Serve over pasta or risotto.Serves 4-6 depending on how many chicken breasts.
