Ingredients

  • 1/2 avocado, mashed with a fork
  • 1 cup whole grain or GF breadcrumbs
  • 1/4 tsp cayenne pepper (optional)
  • 2 1/2 cups cooked quinoa
  • 1 T extra virgin olive oil
  • 2/3 cup fresh chives, chopped
  • 6 cloves garlic, minced
  • 4 T ground flax seeds
  • 2 T nutritional yeast
  • 1 T olive oil
  • 1/2 tsp sea salt
  • 3/4 cup water
  • 1 yellow onion, chopped fine

Instructions

  1. In a medium saucepan, combine flax seeds and water
  2. Simmer for 5 minutes over medium heat
  3. Remove from heat and allow to cool slightly.In a large bowl combine flax seed mixture, quinoa and salt
  4. Stir in chives, onion, avocado, nutritional yeast, garlic and cayenne pepper
  5. Add breadcrumbs and allow to sit for a few minutes
  6. If necessary, add a bit more water or breadcrumbs to achieve the desired texture.Form 12 patties
  7. Heat one tablespoon of olive oil over medium low heat
  8. Add patties and cover
  9. Cook for 8 to 10 minutes until a crisp crust has formed
  10. If patties break apart as you flip them you need to let them cook a bit more
  11. Flip and cook 8 more minutes
  12. Enjoy!
